Rice Vermicelli
Ingredients
- 3 cups dry 777 Brand or any other brand Rice Vermicelli
- 6-7 cups water
- ½ tsp mustard seeds
- 2 tbsp oil
- ½ tsp asafetida
- 1 tsp Urad dal
- ½ tbsp Chana dal
- ⅓ cup roasted peanuts/cashew nuts
- 2-4 green chillies
- 1-2 red chillies
- 6-8 curry leaves
- ½ tsp turmeric powder
- 2 tbsp lime juice
- ½ cup grated coconut
- ¼ tsp asafetida
Directions
- Boil the water in a pan and once the water starts to boil, switch off the flame and add the dry rice noodles.
- Allow to cook for 3-5 mins in the hot water and drain all the water and keep covered to prevent from drying.
- Heat the oil in a pan and add mustard seeds and allow them to crackle.
- Add the urad dal & chana dal and roast till golden brown along with green chillies, red chillies, curry leaves, turmeric & asafetida.
- Add the grated coconut, stir and mix.
- Switch off the flame and add the tempering to the lime lime juice and mix well.
- To this mixture add the cooked rice vermicelli, desired salt and mix well.
- At the end, garnish with either roasted peanuts or cashew nuts and enjoy.
- Adjust the number of chillies for spice and lime juice for taste.
- It goes well with a side of chutney.
