Rice Vermicelli

Ingredients

  • 3 cups dry 777 Brand or any other brand Rice Vermicelli
  • 6-7 cups water
  • ½ tsp mustard seeds
  • 2 tbsp oil
  • ½ tsp asafetida
  • 1 tsp Urad dal
  • ½ tbsp Chana dal
  • ⅓ cup  roasted peanuts/cashew nuts
  • 2-4 green chillies
  • 1-2 red chillies
  • 6-8 curry leaves
  • ½ tsp turmeric powder
  • 2 tbsp lime juice
  • ½ cup grated coconut
  • ¼ tsp asafetida

Directions

  • Boil the water in a pan and once the water starts to boil, switch off the flame and add the dry rice noodles.
  • Allow to cook for 3-5 mins in the hot water and drain all the water and keep covered to prevent from drying.
  • Heat the oil in a pan and add mustard seeds and allow them to crackle.
  • Add the urad dal &  chana dal and roast till golden brown along with green chillies, red chillies, curry leaves, turmeric & asafetida.
  • Add the grated coconut, stir and mix.
  • Switch off the flame and add the tempering to the lime lime juice and mix well.
  • To this mixture add the cooked rice vermicelli, desired salt and mix well.
  • At the end, garnish with either roasted peanuts or cashew nuts and enjoy.
  • Adjust the number of chillies for spice and lime juice for taste.
  • It goes well with a side of chutney.
