Roasted Rainbow Vegetable Salad

Ingredients

  • 1 cup Broccoli
  • ¼ acorn squash
  • ½ cup cut zucchini
  • 1 carrot
  • ½ medium beetroot
  • ½ red pepper
  • ½ Green pepper
  • ¼ cup pomegranate
  • 4 tbsp orange juice
  • 1tbsp lime juice
  • 1tsp agave/honey
  • 1tsp Sriracha
  • 1 tsp of grated ginger
  • 2 tbsp of finely cut jalapenos
  • 2=3 tbsp olive oil

Directions

  • Cut all vegetables into 1 inch longitudinal cuts
  • Place them all separately on a single baking tray and drizzle with olive oil, salt and pepper
  • Roast in a 400 F for 25-30 mins
  • Toss the veggies over in between for even roasting
  • Combine the orange juice, lime juice, ginger,sriracha, agave and jalapenos, salt & pepper according to taste
  • Drizzle over all the roasted vegetables, mix and enjoy
