Sabudana Upma (Kichadi)

Ingredients

  • 1 cup Sabudana (tapioca pearls) soaked in hot water
  • ½ cup mixed frozen vegetables
  • 1 teaspoon grated ginger
  • 2 teaspoons stuffing masala (recipe under masala)
  • 1 green chili (optional)
  • ¼ cup fresh grated coconut (optional)
  • 1 teaspoon lemon juice
  • 4 teaspoons oil
  • Salt to taste
  • ¼ teaspoon mustard seeds
  • Pinch of asafetida
  • 1 teaspoon cilantro, minced

Directions

  • Soak Sabudana in hot water for 3 hrs. Or until soft.
  • Drain it well.
  • In a nonstick saucepan, add oil, mustard seeds, and asafetida, let it split.
  • Add mixed vegetable, chili, salt, and ginger, let it cook (do not add water).
  • Stir in Sabudana and cover the pan until the Sabudana is translucent.
  • Sprinkle the stuffing masala and lemon juice, mix well.
  • Sprinkle cilantro
