Saffron Quinoa Bhat

Ingredients

  • ½ cup Quinoa
  • 1 stick cinnamon
  • 3 cloves
  • 1 bay leaf
  • ¼ teaspoon cumin seeds
  • 3 green chilies
  • 1 inch ginger grated
  • ¼ cup cauliflower cut
  • ¼ cup carrots cut
  • ¼ cup yellow bell peppers
  • ¼ peas
  • 1 small onion (optional)
  • 2 table spoons ghee
  • 10 strands of saffron
  • 1 teaspoon lemon juice
  • Cilantro to garnish

Directions

  • Cook quinoa in a rice cooker or pressure cooker.
  • In a pan, over medium heat, add ghee, saffron strands and cumin seeds. Let the cumin seeds splutter.
  • Add cinnamon stick, cloves, bay leaf and chilies and stir for few seconds.
  • Add onions and sauté it until brown.
  • Add all the vegetables and ginger, let it cook until crisp. Don’t add water.
  • Add the cooked quinoa and lemon juice to the pan and stir it for 5 minutes.
  • Garnish with cilantro.
