Ingredients

  • Lettuce
  • 1 zucchini cut in ½ inch circles
  • 1 carrot grated
  • 2 cucumbers cut in ½ circles
  • 1 yellow pepper cut length wise
  • 1 spring broccolini
  • 10 cherry tomatoes cut in circles
  • 10 grapes cut in circles
  • 10 walnut pieces
  • 10 walnut pieces

Directions

  • Tear the lettuce into pieces.
  • Roast zucchini, yellow pepper and broccolini separately on the stove top or bake it in the oven.
  • Assemble all the ingredients; lettuce, all the baked vegetables, cucumber, tomatoes and grapes.
  • Sprinkle with grated carrot and walnut pieces.
