Scrambled Tofu Breakfast Burrito (Vegan)

Ingredients

  • ½ slab tofu
  • 2 carb balance tortillas
  • ¼ cup red peppers
  • 1 tomato
  • ¼ cup green peppers
  • ¼ red jalapeno
  • ½ medium onion
  • 1 tsp oil/oil spray
  • ¼ tsp turmeric powder
  • 1/4tsp kashmir chilli powder
  • ½ tsp cumin powder
  • Salt for taste
  • 1 tbsp cut cilantro
  • ¼ cup red onions for garnish

Directions

  • Finely chop the red peppers, green peppers, onions, tomato & the red onions
  • Chop the red jalapeno and keep aside. If not available, use ½ tsp red pepper flakes or vary the amount according to spice
  • Heat the oil and add the onions and saute till soft
  • Add the peppers and saute for 1-2 minutes and add the tomato
  • Next add the turmeric, cumin powder, chili powder & salt
  • Saute for a couple of minutes
  • Now add the crumbled tofu and give it a nice stir so it mixes in with the vegetables and the spices and switch off the flame
  • Warm the tortilla on a pan on both sides and keep it on the serving plate
  • Spoon the tofu scramble generously on the burrito
  • Garnish with cut cilantro and cut red onions
  • A dash of ketchup or sriracha can be added at this time
