Seitan with Herb Avocado Marinade Rap

Ingredients

  • 1 package seitan or tofu
  • 1 serving of herb avocado marinade (link)
  • 2 large lettuce leaf
  • 6 cherry tomatoes
  • 2 tablespoons of hummus (I use jalapeno)
  • 1 avocado
  • 2 tortillas or chapatis
  • 1 tablespoon avocado oil

Directions

  • Marinate seitan or tofu in the herb avocado marinade for 30 minutes.
  • In a non-stick pan, heat the avocado oil and roast the marinated seitan for 10 minutes.
  • Assemble the open faced rap, heat the tortilla, spread 1 tablespoon of the hummus, layer the lettuce, roasted seitan, tomatoes and a fresh slice of avocado.
  • I served it with oven roasted potato wedges marinated in olive oil and rasam powder.
