Spinach, Cucumber, Red Chori (red beans) Sambhar

Ingredients

  • 1 cup Toor Daal
  • 1 Cucumber diced
  • 1 bunch Spinach or 1 packet baby Spinach, chopped
  • 3 tbsp tamarind juice
  • 2 tbsp. 777 Sambhar powder or homemade Sambhar powder
  • 1 ½ tsp salt
  • ¼ cup Red Chori
  • 2 tsp dry desiccated Coconut

Directions

  • Cook Toor Daal and Red Chori in instant pot at a manual setting for 12 minutes
  • Cook diced cucumber and chopped spinach
  • Once this is cooked add cooked Toor Daal and Red Chori
  • Add salt, tamarind juice and let boil for 5 minutes
  • Grind the 777 sambhar powder and dry desiccated coconut
  • Add this masala to the cooked vegetables and Toor Daal and Red Chori
  • Boil this for 5 minutes
  • Season with Mustard and Asafetida
  • Can be served with rice or mudde
