Spinach curry with coconut

Ingredients

  • 5 cups finely cut spinach
  • 1 tbsp oil
  • 2 red chillies
  • ½ tsp mustard seeds
  • ½ tsp asafetida
  • 1 tsp urad dal
  • ¼ cup grated coconut (frozen, thawed)

Directions

  • Heat the oil in a pan and add the mustard seeds and allow them to crackle
  • Add the urad dal and allow them to roast to a golden brown
  • Then add the chillies and the asafetida
  • Add the chopped spinach and saute till they are well reduced in quantity for about 3-5 minutes
  • Make sure that all the moisture has evaporated
  • Now add the grated coconut and give it a stir
  • Add salt according to taste
  • The dish can be served with rice or rotis
