Spinach Fruit & Nut Salad

Ingredients

  • 2 cups baby spinach
  • 1 cup strawberries
  • ½ cup blueberries
  • ¾ cup raspberries
  • ½ cup blackberries
  • ½ apple
  • ½ cup red onions
  • ⅓ cup pecans
  • ⅓ cup almonds

Directions

  • Julienne cut baby spinach into nice fine long strands.
  • Cut the strawberries into thin slices.
  • The apple is also sliced thin and cut thin into thin sticks.
  • Cut the onions thin &
  • Add all the above to a salad bowl and give it a gentle mix.
  • Toast the pecans and almonds with a spray of oil in the microwave for a minute. Toss it around and cook for another 30 secs or so. Allow to cool and roughly chop the nuts.
  • A lemon vinaigrette with olive oil, lemon juice, salt & pepper pairs well with this salad.
  • Feta cheese is a good addition & is optional.
