Strawberry Spinach Salad

Ingredients

  • 8-10 strawberries
  • 1-2 cups julienne cut baby spinach
  • ⅓ cup toasted pecans
  • ⅓ cup fresh mozzarella
  • ¼ cup sliced red onions

Balsamic Dressing

  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tbsp agave
  • 1 tbsp sriracha
  • ½ tbsp lime juice
  • 1-2 tbsp water

Directions

  • Slice the strawberries this and julienne cut the baby spinach finely.
  • Sprinkle some salt and a spray of oil on the pecans, mix and coat them well.
  • Toast the pecans in the microwave for 3 mins.
  • Take them out , toss and toast again for 2-3 minutes
  • Slice the red onions finely and cut the fresh mozzarella into cubes.
  • Add all the ingredients and mix well together.
  • Enjoy the fresh salad with the balsamic dressing.
