Strawberry Spinach Salad
Ingredients
- 8-10 strawberries
- 1-2 cups julienne cut baby spinach
- ⅓ cup toasted pecans
- ⅓ cup fresh mozzarella
- ¼ cup sliced red onions
Balsamic Dressing
- 1 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 1 tbsp agave
- 1 tbsp sriracha
- ½ tbsp lime juice
- 1-2 tbsp water
Directions
- Slice the strawberries this and julienne cut the baby spinach finely.
- Sprinkle some salt and a spray of oil on the pecans, mix and coat them well.
- Toast the pecans in the microwave for 3 mins.
- Take them out , toss and toast again for 2-3 minutes
- Slice the red onions finely and cut the fresh mozzarella into cubes.
- Add all the ingredients and mix well together.
- Enjoy the fresh salad with the balsamic dressing.
