Ingredients

  • Rice flour/idiyappam flour ½ cup
  • Roasted urad flour ½ tbsp
  •  Softened butter ½ tbsp
  •  Sesame seeds ½ tsp
  •  Grated coconut 1 tsp
  •  Powdered jaggery ¼ cup + 1 tbsp
  •  Cardamom powder ½ tsp
  •  Water as needed
  •  Cooking oil to fry

Directions

  • Dissolve the powdered jaggery in a little water.
  • Mix all the dry ingredients together and then add the unsalted butter and mix.
  • Add the jaggery water to the dry mixture and mix to form a soft dough.
  • The dough should not be too tight but pliable to make soft round balls.
  • Make round balls of the dough the size of big marbles. Try and make the balls loose. It is okay for cracks to show which helps to release the moisture from inside the ball.
  • Let the balls or seedais rest for 20 mins for all the extra moisture to be absorbed.
  •  Now heat oil and add a few of the balls in low medium flame and fry only a few at a time.
  • Fry till evenly browned on all sides.
  • The balls need to be fried till a deep brown color for them to be cooked well inside.
  • Drain on a paper towel, cool and store in an airtight container.
