Thai Pineapple Fried Rice
Ingredients
- 2 tbsp oil
- 2 cloves garlic
- 3-4 cups cooked rice
- 2 shallots finely sliced
- 1 tsp crushed chilly flakes
- 1 ½ cups fresh cut pineapple or drained pineapple chunks from a can
- ½ cup salted cashews
- 2 finely sliced scallions
- ¼ cup cilantro leaves
- 2 tsp curry powder
- ½ tsp turmeric
- 3 tbsp soy sauce
- ¼ cup veg stock
Optional : Some vegtables can be added like carrots and peas to give some color to the rice along with the pineapple if desired.
Directions
- Heat the oil in a pan and once hot add the minced garlic and the shallots.
- After sauteeing the shallots for a few minutes, add the pineapple chunks.
- Allow the pineapple to caramelize and cook for a few minutes.
- Next add the chilly flakes and the vegetable broth and cook for a minute or so.
- The curry powder and salt is added and stir to allow and mix it all together.
- The cooked rice can now be added and on a low flame, mix it well with the pineapple mixture.
- The soy sauce and the scallions and cashews can be added.
- After the stove is switched off add the coriander as a garnish.
