Ingredients

  • 3 cups vegetables (winter melon, carrots, potatoes, taro , plantain, eda mame, peas)
  • 3 tbsp coconut oil
  • 1 tbsp sesame seeds
  • 1 tsp mustard seeds
  • 1.5 tbsp tuar dal
  • 12 dry red chillies
  • ½ tsp raw rice
  • 3 tbsp tamarind paste (Swad)
  • ¾ cup grated coconut
  • ⅛ tsp fenugreek seeds(methi)
  • ½ tsp turmeric powder
  • 1 tsp asafetida

Directions

  • Heat 1 tbsp coconut oil in a pan
  • Add tuar dal, ¼ tsp mustard seeds, sesame seeds & raw rice for about 15-20 secs
  • Add red chillies & asafetida and take off heat as soon as they turn dark brown
  • Put them aside in the blender jar
  • Take 1 tbsp of oil in a pan and ht and add the grated coconut and roast the coconut till it turns golden   brown in color
  • Grind all of the above with 1 .5 cups of water into a smooth paste
  • Next heat a clean pan and add 1 tbsp of oil and add mustard seeds and allow then to crackle
  • Next add the curry leaves and after a few seconds, add the 3 cups of vegetables
  • Add 3 cups of water, salt and turmeric and cook the vegetables covered for about 5-7 mins
  • Now add the tamarind paste and cook for another 5-7 minutes till the raw smell of
  • tamarind is gone and the vegetables are cooked
  • Next add the ground paste and mix well and cook for 3-4 minutes
  • Swith off the flame and garnish with fresh curry leaves
