Tofu Omelettes ( Vegan)

Ingredients

  • 1 slab tofu (soft or medium)
  • ¼ cup oatmilk / soy milk
  • 2 tbsp nutritional yeast
  • 2 tbsp arrowroot powder
  • ¼ tsp turmeric powder
  • ¼ tsp chilly powder
  • ¼ tsp cumin powder
  • cup broccoli florets
  • ½ cup colored peppers
  • ¼ cup peas
  • ¼ cup corn
  • ½ tsp red pepper flakes
  • Salt & pepper to tast
  • 1 tbsp cut cilantro

Directions

  • Cut all the vegetables finely and saute on a hot pan with a spray of oil.
  • Saute for 2-4 minutes till the broccoli and peppers are a little tender
  • Add the corn and the peas
  • Sprinkle a little water to cook the veggies for a couple of mins
  • Add salt, pepper & the red pepper flakes and mix it well and switch off the flame
  • Next blend the tofu, oatmilk, nutritional yeast, arrowroot powder,turmeric powder,chilli powder, cumin powder & a pinch of salt in the blender till the whole mixture is a creamy batter
  • Heat a pan and spray some oil and using the ladle spread the batter and make the omelette
  • Cook on a low to medium flame for 1-2 mins before flipping it over to cook the other side
  • Top the omelette with a generous helping of the sauteed vegetables on one side and close the flap and serve
  • The vegetables can be varied according to taste and some cheese can be added on the top
  • Some ketchup or sriracha can be drizzled on the top
