Vegan Beet Squares

Ingredients

  • 1 cup steamed beets/1 large Beet 
  • ¼ cup water 
  • ⅔ cup almond flour 
  • 6=8 Medjool dates 
  • ½ tsp cardamom powder 
  • 1 tbsp coconut oil 
  • 2 tbsp coconut flour 
  • ¼ cup grated coconut 
  • 1 tbsp almond flakes for decorating 

Directions

  • Wash & peel the skin of the beetroot and cut into thin discs. 
  • Steam the discs until soft. 
  • Once soft, blend into a smooth puree with the pitted medjool dates & water. 
  • Heat half the oil in a pan & add the Beet puree, almond flour, coconut flour and mix well. 
  • Saute till the mixture thickens and leaves the sides of the pan, around 4-6 minutes. 
  • Add the cardamom powder for a nice aroma and mix well. 
  • Cool and flatten into a greased pan and cut into squares. 
  • Place an almond flake on each square and the squares are ready.
