Vegan Flaxseed Almond Squares

Ingredients

  • 1 cup flaxseed meal 
  • ¾ cup almond flour 
  • 8-10 medjool dates 
  • 2-4 tbsps water 
  • ½ tsp cardamom powder 
  • 1 tbsp broken cashews 
  • 1 tbsp golden raisins 
  • 1 tbsp coconut oil

Directions

  • Blend the dates with a little water into a thick, pasty, puree and keep ready. 
  • Mix the flaxseed meal and almond flour in a bowl. 
  • Add the cardamom powder. 
  • Heat the coconut oil in a pan and roast the cashews and raisins for less than a minute. 
  • To the almond flour/flaxseed meal mixture add the thick date puree and the roasted cashews and raisins. 
  • Mix all the ingredients until they come together in a nice, firm dough and then flatten them onto a lightly greased baking pan according to desired thickness. 
  • Chill in the refrigerator for at least an hour. 
  • Cut into squares and enjoy.
