Vegan Pista Kulfi popsicles

Ingredients

  • 3 cups Oat milk
  • ½ cup Quick cook Oats
  • ½ an Avocado
  • 6 Baby spinach leaves
  • ¼ cup Agave
  • 10 Mejdool dates
  • ¾ cup Pistachios
  • ¼ cup coarsely powdered pistachios
  • 1 tsp Cardamom
  • 1 tsp Vanilla

Directions

  • Heat 1 cup of the Oat milk and add the oats and cook till softened, for around 3-5 minutes.
  • Allow the mixture to cool and then blend with all the remaining ingredients except the pistachio powder into a creamy & smooth mixture.
  • Pour into an ice cream maker if available. Otherwise place the smooth blend in the freezer and blend it every couple of hours for around 2-3 times. This helps prevent icicles from forming in the ice cream.
  • Have the popsicle molds ready and dust the molds with the pistachio powder and fill the creamy blend into the mold and allow it to set in the freezer for at least 4-6 hours
  • Remove from mold and enjoy.
