Vegetable Pasta
Ingredients
- 2 cups chickpea pasta
- 4 cloves garlic
- 2-3 tbsp olive oil
- 2 cup vegetables (asparagus,carrots,peas, zucchini)
- 1 shallot
- ¼ cup pasta sauce
- ¼ tsp red pepper flakes
- ¼ cup Parmesan cheese
- Few basil leaves
- Salt & pepper
- ¼ cup of the pasta water
Directions
- Boil and cook the chickpea pasta according to directions on package for it to be al dente
Reserve a quarter cup of the pasta water for later
- Heat the olive oil in the pan
- Add the minced garlic and the red pepper flakes and cook on a low flame till the garlic is soft and turns golden brown
- Now add the finely cut shallots and saute till they become translucent
- Next add the vegetables all chopped lengthwise and saute covered for a few minutes till the vegetables are just about cooked & crunchy. A few spoons of the pasta water can be added here to help cook the vegetables
- The pasta sauce is added next along with salt , pepper & basil
- 2 tbsp of the pasta water is also added and the cooked pasta is tossed with the vegetables and can be topped with more pepper flakes and parmesan shavings
