Vegetable Pasta

Ingredients

  • 2 cups chickpea pasta
  • 4 cloves garlic
  • 2-3 tbsp olive oil
  • 2 cup vegetables (asparagus,carrots,peas, zucchini)
  • 1 shallot
  • ¼ cup pasta sauce
  • ¼ tsp red pepper flakes
  • ¼ cup Parmesan cheese
  • Few basil leaves
  • Salt & pepper
  • ¼ cup of the pasta water

Directions

  • Boil and cook the chickpea pasta according to directions on package for it to be al dente

Reserve a quarter cup of the pasta water for later

  • Heat the olive oil in the pan
  • Add the minced garlic and the red pepper flakes and cook on a low flame till the garlic is soft and turns golden brown
  • Now add the finely cut shallots and saute till they become translucent
  • Next add the vegetables all chopped lengthwise and saute covered for a few minutes till the vegetables are just about cooked & crunchy. A few spoons of the pasta water can be added here to help cook the vegetables
  • The pasta sauce is added next along with salt , pepper & basil
  • 2 tbsp of the pasta water is also added and the cooked pasta is tossed with the vegetables and can be topped with more pepper flakes and parmesan shavings
