Vegetable Stew

Ingredients

  • 2 cups vegetables (potatoes, beans, carrots, peas, cauliflower)
  • 1 can coconut milk
  • 2 tbsp coconut oil
  • 1 tbsp grated ginger
  • 2 green chillies
  • 6-8 curry leaves
  • 1 onion
  • 2 cloves
  • 1 cinnamon stick
  • 1 cardamom
  • 1 cup water

Directions

  • Cut the vegetables uniformly into cubes and cauliflower into florets
  • Heat the oil in a pan and add the cloves, cinnamon stick & cardamom
  • After about 10 secs add the ginger, green chillies, curry leaves.& onions and saute
  • Once the onions have become translucent , add the cut vegetables and saute for 30 secs
  • Add 1-1.5 cups of water & required salt and cover the pan and cook the vegetables for 5 mins
  • Next add the can of coconut milk and mix well
  • Cover the pan and cook again for about 5 -7 minutes or until vegetables have cooked completely and remove from flame
  • Add 1 tbsp coconut oil and garnish with curry leaves. Enjoy
