Zucchi Kofta Curry
Ingredients

- 1 large onion chopped
- 5 cloves of garlic
- 2 tablespoons ghee
- 1 teaspoon cumin seeds
- ½ cup pureed tomatoes
- 18 cashews
- 1 inch ginger grated
- 1 teaspoon garam masala
- ½ teaspoon chili powder
- ¼ teaspoon turmeric powder
- 2 tablespoons Greek yogurt
- Salt to taste
Directions
- In a sauce pan heat ghee on low heat. Add cumin seeds and let it splutter.
- Add onion and garlic and sauté it.
- Add tomatoes, cashews, ginger, turmeric, chili powder,garam masala and salt.
- Mix all the ingredients and keep stirring until the raw smell of the tomatoes are gone.
- Let it cool, blend all these together.
- Add a teaspoon of ghee in the sauce pan, pour this blended mixture and cook for five minutes. Add the kofta’s and the Greek yogurt into the sauce.
- Garnish with cilantro leaves.
