Beetroot Raita

Ingredients

  • Beetroot 1 med size
  • 1 ½ cups Yogurt
  • ½ tsp Mustard seeds
  • 1 tsp Urad dal
  • Asafoetida a pinch
  • 1 tsp Oil
  • Salt to taste

Directions

  • Clean the beetroot and cut off the top and bottom portions. 
  • Peel the skin with a peeler
  • Place it in a microwaveable bowl with a cup of water and microwave for about 5 mins
  • Turn the beetroot and microwave for a few more minutes
  • Put a knife thru it to see if its cooked
  • Allow it to cool and then grate the beet with a fine grater
  • Add the grated beets to the yogurt
  • Heat oil in a small pan
  • Add the mustard seeds and once it splutters add the urad dal
  • Once the dal is golden brown , add the red chilly and switch off the stove
  • Add the asafoetida
  • Add the seasoning to the yogurt beet mixture
  • Add salt according to taste
